If you know me, you know I love a good cookie! And I decided not to gatekeep this recipe with you. So try it and let me know how you like it.

Best Ever Chocochip Cookies

Makes 6 chunky cookies

Ingredients:

74g of unsalted butter, soft

60g of caster sugar

67g of brown sugar

1 whole egg

5ml vanilla essence or 2g of vanilla bean paste

2g of salt

15g of baking soda

140g of flour

100g of dark chocolate callets or choco chips

Sea salt to sprinkle

Method:

Creamy butter and the two sugars until pale and fluffy. Add the whole egg & vanilla and combine. Fold in all the dry ingredients followed by the chocolate callets.

Chill your dough for a min of 30 mins. Potion into equal sized dough balls – roughly 60-70g each.

Bake at 170°C for 12-15 mins. You should have crispy edges and chewy centres.

Sprinkle some flaky sea salt for a great contrast of flavour and enjoy!

Want an eggless version of this?

Simply substitute the egg with 35g of yoghurt and you should be able to achieve a similar texture.

Want more gooey centres?

Bake your cookie for 11-13 mins, they should be slightly undone and leave them on the baking tray. With the tray still hot, they’ll have the perfect crisp base and will continue to cook the centre just slightly more giving you a gooey centre.
